Story Behind the Song
The song was written in two phases. It started with Mileen noodling around on his acoustic one day and stumbling upon the opening riff. Knowing that he had the song's foundation, he added the remainder of the chords and progressions to come up with the musical skeleton (all while Seth was away in London). Upon returning, Seth added the melody and lyrics based on what he was feeling at the times before he left for the UK, while he was there, and when he returned.
While in the studio, the song was written, but still had no name. Upon hearing the first lyrical line, one of the band members suggested playing around with the phrase "Ice Cream Sundae" to come up with something different. You can hear the play on words at the end of the song as both Seth and Alex pan back and forth with each other.
Originally intended to be an acoustic-only song, the group recorded the song in a "band" format as time in the studio was very limited.
